Do you spend a lot of time outside? I love to make this Day Glow Juice for an added protection against the sun. Carrots are inexpensive, available in bulk, and full of nutritional value! 
Carrots get their beautiful deep orange color from beta and alpha carotene pigment. That pigment promotes vitamin A production in the body, which is an essential vitamin for healthy eyes and skin. Beta-carotene can promote healthy skin and wound healing(1). They also promote a healthy inflammatory response(2), so if you have a sunburn, eating carrots can help reduce inflammation. Ginger also promotes a healthy inflammatory response(3). Ginger is a spicy root, which pairs well with the sweetness of the carrots and apple in this recipe. 

Want a fun twist on this recipe? Choose multi-color carrots, like purple, red, yellow and white for more than just their pretty colors. Multi-color carrots have various pigmentation, which offer antioxidant variety.

Ingredients
  • 4 to 5 organic washed and peeled carrots
  • 1 organic Fuji apple (any sweet apple will suffice)
  • 1/2 to 1 whole lemon (depending upon preference)
  • 1 to 1 1/2 thumb's-length of ginger
Directions
  1. Juice all ingredients.
  2. Pour over ice.
