Similar to my Brazilian Açaí Berry Bowl recipe, this is a smoothie version! A traditional Açaí bowl is thicker than a smoothie. This recipe features coconut water for the additional liquid. Pronounced (a-sa-EE), Açaí berries grow on a species of palm in Central and South America. They have a bright, sweet flavor and are a very deep purple. A traditional way to enjoy them is frozen and pureed, topped with fresh fruit (traditionally bananas and granola). Today's smoothie features toppings that are simply what I had on hand. Get creative! Icy cool, sweet, and full of texture, this smoothie will satisfy you and make you feel like you stepped foot onto a sandy beach in South America.
- Run the Açaí berry packs under hot water for about 5 seconds each to loosen up.
- Add your coconut water to the blender.
- Add the banana, Açaí berry packs and peanut butter. Blend until smooth.
- Top with sliced bananas, frozen wild blueberries and chia seeds....or whatever you'd like!
Enjoy and be well!
