These zucchini and sweet potato fritters are perfect for any meal of the day! Sweet potatoes are a starchy root vegetable packed full of antioxidants, phytochemicals like beta-carotene, copper, zinc, Vitamin A and Vitamin B6(1). Zucchini is a summer squash and 95% water. They are great sources of Vitamin C and Potassium(2). Pastured eggs are best to use in this recipe as studies show they contain higher amounts of omega-3 fatty acids and higher concentration of Vitamin A and E(3).
*Note: You can also bake them on a unbleached parchment lined cookie sheet at 400 F. for 15-20 mins or until golden brown.
Recipe makes 8 fritters. Serve on a romaine heart leafy green and top with tomato or avocado.
